The desalted cod is one of the most common ingredients in the dishes of Lent and Easter. This in particular is very typical of Castilla y León and the brand tradition that is elaborated with potatoes, garlic, egg and oil: it is crushed in a mortar and added to the cod. Delicious!

Cod fritters

Another way to take cod in Easter is with the fritters: These are fried balls of crumbled cod paste and mixed with other ingredients. The cod fritters should be cooked paying special attention to the mixture, since all the ingredients must be well integrated for a perfect result.

What is more typical in Holy Week than your own vigil stew? It is made with chickpeas with spinach and cod and, although it is possible that the children do not get too much attention at first, it is a very healthy and delicious dish that you will love if you know how to give it to them.

The preparation is very simple: put the chickpeas in hot water until they reach their half-cooked, after this add the cod, spinach and wait until it is prepared, add a sauce and some bay leaf. Let it rest for half an hour and serve hot. The trick of the preparation is only to know the moment in which the fish and spinach are poured over the boiling chickpeas.

Shrimp omelette for Easter

This dish is not typical of Easter in itself but of the Andalusian gastronomy (mainly from Cádiz). Even so, it is also customary to take it on these dates due to the prohibition of taking meat on Good Friday and the simplicity of the dish: it is a kind of shrimp-fried cakes that are crisp and thin. Delicious!


Garlic soup

Garlic soups are one of the most typical and popular dishes of Spanish cuisine. They also take a lot during Holy Week for the same reason as the shrimp omelette. To make it, bread is cut into thin slices; Garnish with garlic in a pan and, once browned, add the bread to sauté it. Then add paprika and water and salt and turn up the heat. When the water begins to boil, cover and lower the heat to cook. After unpacking the bread with a fork, the soup is ready.
